I'm not going to lie to you, there is more than a little peeling and chopping involved in this recipe. But it is Deeee-licious! And it is SO good for you. It's chocked-full of vitamin-rich fruits and veggies. And it is warm and smooth, the perfect thick-n-hearty pureed soup, with a hint of sweetness from the apple. Oh. So. Good. I highly recommend. This Week in Food: Lasagna Soup

Warm and hearty, this soup will fill you up without sitting too heavy or killing any attempts at healthy eating…and it's pretty darn easy. One pot cooking, which I love. A little chopping, cooking the meat and veggies, then it's just assembly and simmer time. Once I got things going, I was able to cut out shapes from construction paper so my kids could do a Christmas craft at the kitchen island while I cooked. Not bad. And if you like the taste of lasagna, then you'll like this soup. It's super hearty and the leftovers reheat well (though if you don't add extra liquid when you reheat, your leftovers will eat more like deconstructed lasagna than soup…which is fine by me.). It would also be a nice alternative to a pan of lasagna when taking dinner to a friend in need. Tonight I'm trying a new corn chowder recipe, so we'll see how that goes. This Week In Food...Zesty Spinach Soup!

Here's a quick and easy soup that's as good in the summer as it is in the winter...and it's a great way to use up that spinach you got at the farmer's market last weekend and haven't yet used! I don't know how you feel about the idea of spinach soup, but this soup tastes more like chicken broth, onion and potatoes than it does spinach-- which has a surprising mild flavor in soup, so don't worry about being overpowered by spinach flavor. The spinach does, however, make it a really pretty shade of green and packs an excellent health punch. Trust me, this soup is so easy and so good, you really should give it a try... This Week In Food...Soup Season's Last Hurrah

As we tumble quickly toward Summer, I realize that we begin to move away from soups and toward grilling. But it's downright chilly here today and I have a little man who is in love with soups right now, so I thought I'd give soup one last shot before we pretty much call it quits till October. So if you're in the mood for one last taste of warm and comfy soup too, here's a recipe for you... This one has made the rounds on Pinterest so you may have seen it or even tried it. If not, you must! It is so yummy, so easy, and such a crowd pleaser that you just can't go wrong with it. The original recipe, which I've adapted a bit, is called Cheesy Vegetable Chowder and came from luluthebaker.blogspot.com. But really, I think it's more of a nice, thick, cheesy, potato-broccoli soup...with a few other veggies thrown in. Regardless of what you call it, it's just plain yum.
