Easy Weeknight Dinner: Broccoli Pasta

It's back to school time! Which means new schedules and tighter timelines; back to running between activities and trying to get everything done and everyone to bed on time; and back to needing easy, nutritious dinners that everyone will eat...bonus points for ones that make good leftovers! So, as we all get back into the swing of things, I thought I'd share a quick and easy weeknight dinner recipe. I made this one last night and we gobbled it up! You can make it with just the pasta and broccoli, or you can add some extra protein with either chickpeas or chicken. (I added chickpeas. If you want to make it with chicken you can use chopped, leftover chicken or shredded rotisserie.) Simple. Yummy. Nutritious. Not known for my beauty food shots; but trust me, it's good. Gwyneth Paltrow's Lemon Pasta...A Fresh Twist on Pasta Night

Pasta is an easy, family-friendly, go-to dinner option and something I often incorporate into my weekly menus. So I am always looking for ways to mix it up in the pasta department and Gwyneth Paltrow's Lemon Parmesan Spaghetti fits the bill perfectly! I checked out her cookbook from the library a few months ago and tried a few recipes. I enjoyed the cookbook overall, but particularly loved this recipe because it's both good and easy (my favorite kind these days, as cooking with kids underfoot isn't always easy!). The flavor profile is super kid-friendly (both of my kids loved it) without being chicken-nugget-esque "kid food" and the recipe really couldn't be simpler. The lemon flavor is light and fresh, so even though you're eating pasta, it doesn't feel heavy. I serve this up with a nice salad and a little bread. So, here you go... Today I'm just sharing a few good recipes of mine. These are all things I've made many, many times and are ones my whole family enjoys. And shock of all shocks...they're not from Pinterest! These are actually from long before I discovered Pinterest. So, enjoy! The Best Damn Turkey Burgers It's grillin' season! Whip up these burgers and toss them on the grill and you will not be disappointed. This recipe originally came from Cooks.com and was called Cajun Turkey Burgers. However, they don't taste "Cajun" at all (they're not spicy)...but they are awesome. Truly. If you think turkey burgers tend toward the tasteless hockey puck variety, try these and it will change your mind. I swear. This Week In Food...One Home Run, One Base Hit and One Walk

Hello food friends! I hope this post finds you all well-fed and happy...and either with a nice glass of wine or a good cup of coffee in-hand (depending on the time of day you're reading this...though, who am I to judge). As you all may remember, I tried out three new recipes last week. And, I'm here to report that it was with mixed success (enter: baseball metaphor)... The Home Run I had one home run, and that was the Crockpot Brown Sugar and Balsamic Glazed Pork Tenderloin. It was a total hit with everyone. My husband couldn't stop talking about it and my 3 year old asked for more three times. ("More chicken and sauce," she kept saying...all meat is chicken to her, but the point is that she loved it! Especially the sauce.) Even the leftovers were great. So, I highly recommend this recipe. This Week In Food...Crockpot Chicken Cordon Bleu and Mexican Stuffed Shells Were Both Winners!

Looks like I went two for two with new recipes last week! Both the Crockpot Chicken Cordon Bleu and the Mexican Stuffed Shells were winners with Rolland and Portia, so you can't beat that! Guess that means the recipes should be shared! So here they are... Crockpot Chicken Cordon Bleu 6 boneless, skinless chicken breast halves 1 can condensed cream of chicken soup (I used low fat) 1 c. milk 4 ozs sliced ham 4 ozs sliced swiss cheese 1 8 oz pkg herbed, dry bread stuffing mix (like Stovetop) 1/4 c. butter, melted Mix together the cream of chicken soup and milk in small bowl. Pour enough of the soup into your crockpot to cover the bottom. Layer chicken breasts over the sauce. Cover with slices of ham and then swiss cheese. Pour the remaining soup over the layers, moving around to distribute. Sprinkle the stuffing on top and drizzle butter over stuffing. Cover and cook on low for 4-6 hrs or 2-3 hrs on high.
