This Week In Food... A Few Good Recipes From My Recipe Box

Today I'm just sharing a few good recipes of mine. These are all things I've made many, many times and are ones my whole family enjoys. And shock of all shocks...they're not from Pinterest! These are actually from long before I discovered Pinterest. So, enjoy! The Best Damn Turkey Burgers It's grillin' season! Whip up these burgers and toss them on the grill and you will not be disappointed. This recipe originally came from Cooks.com and was called Cajun Turkey Burgers. However, they don't taste "Cajun" at all (they're not spicy)...but they are awesome. Truly. If you think turkey burgers tend toward the tasteless hockey puck variety, try these and it will change your mind. I swear. And they're easy. 1 lb ground turkey (get lean, not extra-lean...you need a little fat in it) 1 egg, beaten 1 tbsp Worcestershire sauce 1/2 tsp salt 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp ground red pepper 1/2 c. seasoned dry bread crumbs (y...

This Week In Food...Do Something Good With Ground Turkey

Hello food friends! I'm pretty late to the food game this week, but my entire week was thrown off kilter by being sick Friday thru Tuesday. You know how it is...you get a couple of days behind on your to-do's and then you just frantically play catch-up all week. So here I am on Friday, just getting to This Week In Food! Tragic. I hope you haven't all starved without me...or worse, just eaten the same old chicken breast every day. Ick. Anyway, let's start with a quick recap of last week. If you recall in last week's post I mentioned that I was starting a diet. Well, I worked really hard and did really well following said diet for one week. Then I got sick and now can't stand the thought of eating any of the diet food anymore because I now associate it with feeling sick. So much for that. And I had even lost a couple of lbs on it. Oh well. I guess it's back to my normal "eat healthy most of the time, exercise regularly, and hope for the best" appro...

This Week In Food...Crockpot Chicken Cordon Bleu and Mexican Stuffed Shells Were Both Winners!

Looks like I went two for two with new recipes last week! Both the Crockpot Chicken Cordon Bleu and the Mexican Stuffed Shells were winners with Rolland and Portia, so you can't beat that! Guess that means the recipes should be shared! So here they are... Crockpot Chicken Cordon Bleu 6 boneless, skinless chicken breast halves 1 can condensed cream of chicken soup (I used low fat) 1 c. milk 4 ozs sliced ham 4 ozs sliced swiss cheese 1 8 oz pkg herbed, dry bread stuffing mix (like Stovetop) 1/4 c. butter, melted Mix together the cream of chicken soup and milk in small bowl. Pour enough of the soup into your crockpot to cover the bottom. Layer chicken breasts over the sauce. Cover with slices of ham and then swiss cheese. Pour the remaining soup over the layers, moving around to distribute. Sprinkle the stuffing on top and drizzle butter over stuffing. Cover and cook on low for 4-6 hrs or 2-3 hrs on high. (Amy's Notes: I used four chicken breast halves and simply place...
